Love cooking, creating and baking? Then you need to be at the smooth Festival of Chocolate Callebaut Test Kitchen, designed and built for use by the very talented team at Knebel Kitchens!
Hosted by smoothfm's very own Cameron Daddo, some of Sydney’s most talented chefs and pastry chefs will be appearing in the Callebaut Test Kitchen demonstrating delectable desserts, mouth watering macarons and even showing you how to get involved in the Raw Real Food movement!
Here's a rundown of the talent you can see in the Callebaut Test Kitchen...
11am - Carlos Heng, Mak Mak Macarons Founder of Mak Mak Macarons, Carlos Heng’s macarons are legendary in Sydney, even beating global macaron makers Laduree and celebrity chef Adriano Zumbo to claim a Best title in a blind tasting challenge in 2012! For Callebaut Test Kitchen audience members at the smooth Festival of Chocolate, Carlos will be demonstrating how to make his Five Textured Macaron.
12pm – Emma Braz, Australian Women’s Weekly Food Editor There are two things we love at smoothfm: peanut butter and chocolate. So when the Australian Women’s Weekly’s Cookbook Food Editor Emma Braz told us she had a recipe that combined these two loves in one indulgent cake, we told her she just had to bring it to the Callebaut Test Kitchen! Emma will be demonstrating how to make her Peanut Butter Chocolate Cake (from The Australian Women’s Weekly Cookbook titled 'Indulgent Cakes') for the audience at the smooth Festival of Chocolate.
1pm – Jean-Michel Raynaud, Executive Pastry Chef, Baroque Bistro and La Renaissance Patisserie, The Rocks One of Sydney’s best and most acclaimed pastry chefs, Jean-Michel’s work must be seen and tasted to be truly understood. We are so honored to have a chef of Jean-Michel’s caliber appearing in the Callebaut Test Kitchen, demonstrating his Jaffa mousse, chewy caramel centre, coconut streusel in chocolate sphere.
2pm – Damien Brassel, Corporate Executive Chef, Urban Purveyor Group Heading up the team at some of Sydney’s best restaurants, Ananas Brasserie, Sake, The Bavarian Bier Café and The Cut Bar & Grill, Damien Brassel will demonstrate his Dragons Breath of Chocolate Macarons with liquid nitrogen. We are so excited to see this dish come to life!
3pm – Danielle Minnebo, Founder of Food to Nourish Qualified Nutritionist and passionate home cook, Dannielle Minnebo is committed to spreading the word about real food. She will be demonstrating her Raw Chocolate Orange Tart for our lucky audience in the Test Kitchen.
4pm - Dean Gibson, Master Pastry Chef, Team Pastry Australia and Hunter Tafe Lauded all over the country for his amazing showpieces, artistic flair and talent, Dean will be demonstrating the Croffle, a cross between a waffle and a croissant - very new to Australia and really tasty. The Croffle is served with chilli chocolate sauce using Alunga pur lait Cocoa Barry chocolate, raspberry caramel sauce, honeycomb, vanilla bean ice cream and salty caramel popcorn.
11am - Jennene Plummer Bauer Food Studio and Women’s Day Food Director Having headed up some of the country’s most respected food titles such as Family Circle, Super Food Ideas and Australian Table, it’s an understatement to say Jennene knows a thing or two about great food and baking! We are thrilled to have Jennene demonstrating her delicious Rocky Road topped Brownies.
12pm – Pradeep Devamittage, Executive Pastry Chef, Kazbah Restaurant Group The smooth team has been lucky enough to dine at the eclectic, Moroccan-inspired Kazbah restaurant, so when we discovered their very talent Executive Pastry Chef, Pradeep, was joining the festival we were just a little excited! Pradeep will be demonstrating his delectable Moroccan Rocky Road.
1pm – Julia Taylor, Pastry Chef, La Renaissance Patisserie An official ambassador for the smooth Festival of Chocolate, Julia started her career on Masterchef Australia where she was the runner up on the 2012 season. Julia has since gone onto to be one of the most successful exports of the hugely popular show, training as a Pastry Chef under the watchful eye of acclaimed chef Jean-Michel Raynaud at La Renaissance Patisserie in The Rocks. Julia will be demonstrating her caramelised apple, orange and Cacao Barry Alto El Sol mousse cake for our audience.
2pm – Major winner judging, Callebaut Chef Competition Our six Callebaut competition finalists will come together to have their chocolate creations judged by a team including Dean Gibson and smoothfm’s very own Ty Frost. The major winner will travel Belgium to attend a workshop in the Callebaut International Academy, while the winning business will score an advertising package on smoothfm.
